A light and fluffy sponge cake that can be dressed up with jam and cream, icing and fresh fruit. Also suitable for making Swiss rolls.

How to use

PLAIN SPONGE CAKE

500g gluten-free sponge mix

225ml water

2 small eggs

CHOCOLATE SPONGE CAKE

500g gluten-free sponge mix

225ml water

2 small eggs

40g cocoa powder

1. Add Gluten Free Sponge Mix (and cocoa for chocolate sponge) to liquid ingredients in a bowl.

2. Mix for 1 minute on low speed using a whisk.

3. Mix a further 5 minutes on high speed.

4. In your cake tin bake at 190C until fully baked.

SWISS ROLL:

Deposit a thin layer of batter onto cake tray lined with baking paper. Bake at 210C for 10-12 minutes.
