Whole celery seeds with a warm, grassy, slightly bitter flavour and an aroma reminiscent of fresh celery and parsley. They hold up well to long cooking.

• Pickling: brines, dill pickles and pickled vegetables.

• Salads and soups: crush into coleslaw or potato salad dressings, or stir into stocks and stews.
