Coarse Lake Deborah salt, harvested from a pink salt lake in the Western Australian goldfields. It is unrefined, with a clean, crisp flavour.

• Salt grinder: crack over roasted vegetables, salads, soups and steak.
• Cooking water: dissolve in pasta or vegetable water.
• Salt crusts: for baking whole fish or beef.
• Finishing: scatter over focaccia before baking.
