Dried shiitake mushrooms with an intensely earthy, woody, smoky aroma. Drying concentrates the flavour, and once rehydrated they are meaty, rich and full of umami.

• Use: soak in hot water until soft, then slice into stir-fries, noodle dishes and risottos.
• Broths: add to soups and slow-cooked dishes, and use the soaking liquid as a flavourful stock.
